Whole Brisket, 3-5 lbs.    
Texas is known for theirs!  They can be smoked or braised and sliced.  Best
when, brined, rubbed, and slow roasted in oven.

Tri-Tip Roast, less than 3 lbs
The tri tip is a conjunction of 3 muscles and makes a smaller and leaner roast.  
Perfect for a small family.  Commonly cooked in the crock pot with your
favorite bbq seasonings.

London Broil approx. 2 lbs.
Marinate for as long as you can stand it, at least overnight, then sear it on the
grill or on the griddle.  Slice it against the grain.  These are cut from the round
and are delicious and lean.  If you prefer not to marinate, bring to room
temperature, grill as hot as you can get your grill for 4 min per side, turning
only one time, remove from heat, rest 15 min, slice thin and serve.  Fabulous!

A chuck roast is a fattier roast than the above, will be rich, juicy, and
fall apart in the crock pot.  You cannot mess this one up! Also does
well when oven roasted in a dutch oven.

Shoulder Roast  approx. 3 lb.s each (aka: Pot Roast)
This roast differs from the chuck in that it is larger and has a small round bone
in it full of marrow.  This is great to get some of that rich, flavorful, marrow
into your dishes.  It is fattier and flavorful like the chuck.  Great in the crock
pot or oven roasted.

Eye of Round Roast  approx 3 lbs. each  
This roast is leaner than the chuck and shoulder and keeps it's shape after
being slow cooked. This means it'll slice nicely for roast beef sandwiches once
cooled.  It'll be large enough to provide leftovers after serving a family dinner.
